Told you I love pumpkin... wait til I get my pumpkin cheesecake recipe up.... lol
This has now become my breakfast of choice. I had been eating an Atkins bar and pack of the South Beach nut mix, but this is lower in carbs and fills me up just as much.
Here's what you need -
1/4 cup canned Pumpkin (not the pumpkin pie filling.... )
1/4 cup unsweetened Almond Milk (I use this instead of heavy cream because this is 0 carbs)
3/4 cup Water
1 tsp Sugar Free Vanilla Syrup
1/2 tsp Pumpkin Pie Spice
1/2 cup Ice
1 scoop Vanilla Whey Protein Mix (the brand I use is only 2 carbs per scoop)
Put all ingredients in the blender and mix. This is very delicious and only about 4 carbs.

Low Carb Pumpkin Fluff
Fall has to be my favorite time of year... The weather starts to cool off, all the beautiful colors of the leaves changing (well, at least back home in Ky), marching band/football season is well under way, and pumpkin flavor everywhere!!! Here's a quick recipe a friend gave me... Not exactly sure the carb count (I'm guessing about 6 carbs in a serving, makes about 8)
1 can Pumpkin (make sure it's NOT pumpkin pie filling)
2 boxes Sugar Free Vanilla Pudding
1 container Sugar Free Cool Whip
Mix (very) well and serve

Low Carb - Sugar Free Cream Cheese Cookies
Sound strange? Maybe... but I tell you what. I made these a couple weeks ago and they are AMAZING! I thank Leigh Ann for telling me about this recipe and thank Sherry Symmonds (http://www.justapinch.com/recipe/sherry-symmonds/cream-cheese-cake-mix-cookies/quick-easy-cookies-for-kids) for posting the recipe.
Here's what I did -
1 box Sugar Free cake mix (so far I've only seen a vanilla and a chocolate in the store)
8 oz cream cheese, room temp
1/2 stick of butter
1 large egg
2 tsp vanilla
Any low-carb add-ins (I used walnuts for mine)

1 Preheat oven to 375 degrees.
2 Cream together butter and cream cheese. Add egg and vanilla and mix until well blended (I used a mixer for this part only).
3 Stir in cake mix a little at a time until it's all blended and then add any low carb add-ins you'd like

I kind of got this idea to start this recently as I've been searching for new low carb recipes on the net. I've had people ask me about recipes and I figured this would be the best way to share my findings, review what recipes work and what ones need some tweeking.
Now, this won't be all weight loss and low carb... I am a self-proclaimed (and proud) nerd and love to also share cool things I find in music, sci-fi, gaming... etc....
